Smoke

Azelis (Broste) has manufactured smoke flavours for almost 40 years and is the largest manufacturer in Europe.

Scansmoke is used in the following industries:

Scangold 

While smoke flavours provide a varying degree of colour together with the flavour, Scangold produces the brown, roasted colour without the smoke flavour. The colour is produced in a Maillard type of reaction when Scangold is exposed to heat in the presence of proteins. Any source of heat will produce the colour. This makes Scangold valuable for the treatment of meat and chicken in prepared dishes for the microwave oven. It is also used for industrially prepared chicken where cooking time can be significantly reduced when Scangold is applied for the browning effect.

Scansmoke consists of three product lines.

Scansmoke is based on pure, natural raw materials, and all products comply with the European smoke regulation EC 2065/2003. All products are Kosher certified.

Scansmoke liquid smoke is produced from heat treated wood. The smoke is then condensed and purified to remove impurities such as PAH – potentially carcinogenic components – which is the main health problem associated with traditional smoking. Liquid smoke is well suited for e.g.:

The flavours range from mild, sweet and mellow, up to a more intense smoke flavour profile. The colour varies from no colour to deep golden brown.
